Turkey Soft Tacos

Recipe Ingredients

3/4 lb 340g / 11ozGround skinless turkey breast
1   Onion chopped
2   Garlic cloves - minced
1 cup 160g / 5.6ozCanned black beans - rinsed and drained
1   Green bell pepper - seeded and diced
1   No-salt-added tomato sauce - (8 oz)
1   Jalapeño pepper - seeded, deveined,
  And chopped
  = (wear gloves to prevent irritation)
2 teaspoons 10mlGround cumin
2 teaspoons 10mlChili powder
1/2 teaspoon 2.5mlDried oregano
8   Fat free flour tortillas - (6" dia) - warmed
2 cups 474mlShredded lettuce
1   Tomato - chopped

Recipe Instructions

Spray a large nonstick skillet with nonstick cooking spray; heat. Add the turkey, onion and garlic; cook, stirring as needed, until the turkey is browned and the onion is softened, about 5 minutes.

Add the beans, bell pepper, tomato sauce, jalapeño, cumin, chili powder and oregano; bring to a boil. Reduce the heat and simmer, uncovered, stirring as needed, until the flavors are blended, 10 to 15 minutes.

Top the tortillas with the turkey mixture, lettuce and tomato; roll up and serve.
