4 | Boneless skinless turkey breast cutlets - - (3 oz ea) | |

1 cup | 237ml | Thinly-sliced mushrooms |
1 | Onion - chopped | |
1/4 cup | 36g / 1.3oz | Chopped lean ham |
2 | Part-skim mozzarella cheese - (3/4 oz ea) - halved | |
1/4 cup | 59ml | Canned pimientos - julienned |
Preheat the oven to 350 degrees. Spray an 8-inch square baking pan with nonstick cooking spray.
In a gallon-size sealable plastic bag, combine the flour, pepper and poultry seasoning. Add the turkey; shake to coat.
In a large nonstick skillet, heat the oil. Add the turkey and cook until lightly browned, about 2 minutes on each side. Transfer to the baking pan.
In the same skillet, combine the mushrooms, onion and ham; cook, stirring constantly, until softened, about 5 minutes. Spoon evenly over the turkey; top each cutlet with a cheese slice. Bake until the turkey is cooked through, about 15 minutes. Serve, garnished with the pimiento strips.
