Southwestern Pasta Sauce Recipe - Cooking Index

| 1 | Garlic clove - minced | |
| 1/4 cup | 59ml | Olive oil | 
| 3 1/2 cups | 511g / 18oz | Crushed or coarsely chopped canned | 
| Tomatoes | ||
| 3/4 teaspoon | 3.8ml | Tabasco brand Pepper Sauce | 
| 1/4 teaspoon | 1.3ml | Salt | 
| 2 tablespoons | 30ml | Minced fresh cilantro | 
| 1/4 teaspoon | 1.3ml | Granulated sugar | 
| 12 oz | 340g | Angel hair pasta - freshly cooked | 
| Grated Parmesan cheese | 
Heat oil over medium heat in large, heavy non-aluminum saucepan. Stir in onions and garlic; saute 10 to 12 minutes, stirring occasionally, until tender. Add tomatoes, Tabasco sauce, salt, cilantro and sugar; bring to a boil. Reduce heat to low and simmer uncovered 30 minutes until slightly thickened.
Place hot cooked pasta on heated serving platter; top with sauce. Sprinkle with Parmesan cheese.
