2 | Vegetable bouillon cubes | |
(or 2 tspns instant broth granules) | ||
2 cups | 320g / 11oz | Raw brown rice |
1 | Red kidney beans - rinsed, drained | |
1 | Onion - chopped (large) | |
1 | Green bell pepper - chopped (large) | |
1 | Original or Spicy Tabasco 7 Spice Chili | |

1 teaspoon | 5ml | Ground cumin |
Put water and bouillon cubes in 4-quart heavy-gauge saucepan with lid. Bring to a boil over high heat. Stir in rice. Return to a boil; add remaining ingredients. Return mixture to a boil; reduce heat to low (if cooking over campfire, move to side). Cover and simmer 45 minutes or until liquid is absorbed.
Remove from heat and let stand 5 minutes before serving.
This recipe yields 6 servings.
