Spaghetti With Spinach And Cheese

Recipe Ingredients

2   Shallots - chopped
2   Garlic cloves - minced
4 cups 948mlTorn cleaned spinach - (abt 1 bunch)
2   Tomatoes - chopped
1/4 cup 23g / 0.8ozMinced basil
3/4 cup 109g / 3.8ozShredded part-skim mozzarella cheese
1/4 teaspoon 1.3mlCoarsely-ground black pepper
2 cups 474mlHot cooked spaghetti
2 tablespoons 30mlGrated Parmesan cheese

Recipe Instructions

Spray a large nonstick skillet with nonstick cooking spray; heat. Add the shallots and garlic; cook, stirring as needed, until softened, about 5 minutes.

Add the spinach, tomatoes and basil; toss lightly. Reduce the heat and simmer, covered, until the spinach is wilted, 4 to 5 minutes. Remove from the heat. Add the mozzarella cheese and pepper; toss to combine.

Place 1 cup of the spaghetti on each of 2 plates. Top with the spinach mixture and serve, sprinkled with the Parmesan cheese.
