Spaghetti With Spinach And Cheese Recipe - Cooking Index

3/4 cup | 109g / 3.8oz | Shredded part-skim mozzarella cheese |
1/4 teaspoon | 1.3ml | Coarsely-ground black pepper |
2 cups | 474ml | Hot cooked spaghetti |
2 tablespoons | 30ml | Grated Parmesan cheese |
Spray a large nonstick skillet with nonstick cooking spray; heat. Add the shallots and garlic; cook, stirring as needed, until softened, about 5 minutes.
Add the spinach, tomatoes and basil; toss lightly. Reduce the heat and simmer, covered, until the spinach is wilted, 4 to 5 minutes. Remove from the heat. Add the mozzarella cheese and pepper; toss to combine.
Place 1 cup of the spaghetti on each of 2 plates. Top with the spinach mixture and serve, sprinkled with the Parmesan cheese.
