2 tablespoons | 30ml | Lemon juice |
4 tablespoons | 60ml | Olive oil |
2 tablespoons | 30ml | Vegetable oil |
1/2 teaspoon | 2.5ml | Dijon mustard |
1/4 cup | 36g / 1.3oz | Chopped parsley |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||

Chop the cooked beets and place them in a mixing bowl. Combine the lemon juice with olive oil, vegetable oil and mustard; whisk together and season with salt and pepper. Toss with the beets and parsley; adjust seasoning and serve with Roast Pork, Celery Root Remoulade, cornichons and mustard and heavy rye or pumpernickel bread.
