Garlicky Shrimp And Cannellini Beans Recipe - Cooking Index
1 | White beans - (16 oz) - drained, rinsed | |
2 tablespoons | 30ml | Extra-virgin olive oil |
1 | Garlic clove - minced | |
Water or chicken broth | ||
8 oz | 227g | Peeled shrimp - (weight after peeling) - deveined, and |
Cut into 1/2" pieces | ||
1/4 cup | 36g / 1.3oz | Chopped fresh parsley or basil |
Salt - to taste | ||
Crushed red pepper flakes - to taste |
Simmer beans, olive oil and garlic for 10 minutes. Add some water or chicken stock to make the mixture soupier.
Add shrimp, cover and simmer 5 minutes or until shrimp turns pink.
Add parsley and season well to taste with salt and crushed red pepper.
This recipe yields 2 servings.
