Sweet And Spicy Pork Tenderloin Recipe - Cooking Index
2 | Pork tenderloins - (12 oz ea) - whole | |
1 1/2 teaspoons | 7.5ml | Sugar |
1/2 teaspoon | 2.5ml | Salt |
1 teaspoon | 5ml | Freshly-ground black pepper |
1/2 teaspoon | 2.5ml | Coriander |
1/2 teaspoon | 2.5ml | Ground cloves |
1 teaspoon | 5ml | Olive oil |
1/4 cup | 82g / 2.9oz | Maple syrup |
In a small bowl, combine the sugar, salt and spices. Place the tenderloins into a glass baking dish and rub the spice mixture into the meat. Cover and refrigerate for six hours.
Preheat the oven to 375 degrees. Tuck the tail of each tenderloin under itself to form a small roast (secure with toothpicks or kitchen string at 2-inch intervals). Brush each loin with olive oil.
Roast for 20 minutes. Brush each loin with maple syrup at least two more times while roasting another 25 minutes. Remove from the oven. Cut across the grain and spoon any juices over the meat.
