Steak With Steamed Vegetables, Soba Noodles and Ginger

Recipe Ingredients

12 oz 340gLoin steak
1/2 lb 227g / 8ozSoba noodles - ready to cook
2 cups 474mlFresh asparagus - cut 1" segments
2 cups 292g / 10ozBroccoli florets
  Sauce
1/2 cup 118mlReduced sodium soy sauce
1/3 cup 78mlRice wine vinegar
1 tablespoon 15mlSesame oil
1   Fresh ginger - (1 1/2" long) - peeled, grated
1 teaspoon 5mlSugar
  Freshly-ground black pepper - to taste

Recipe Instructions

Cook steak -- grill, broil, or fry in a non-stick pan until medium-rare. Set aside on covered platter to keep warm.

Cook soba noodles in simmering water until almost tender. While noodles are cooking, steam the vegetables until tender-crisp.

Combine sauce ingredients. Heat through.

Drain soba noodles, rinse and redrain. Toss vegetables with the noodles. Place onto plates. Slice steak across grain into 1/2-inch strips. Arrange on top of vegetables and noodles. Top with sauce. Serve immediately.
