Steak With Steamed Vegetables, Soba Noodles and Ginger Recipe - Cooking Index
12 oz | 340g | Loin steak |
1/2 lb | 227g / 8oz | Soba noodles - ready to cook |
2 cups | 474ml | Fresh asparagus - cut 1" segments |
2 cups | 292g / 10oz | Broccoli florets |
Sauce | ||
1/2 cup | 118ml | Reduced sodium soy sauce |
1/3 cup | 78ml | Rice wine vinegar |
1 tablespoon | 15ml | Sesame oil |
1 | Fresh ginger - (1 1/2" long) - peeled, grated | |
1 teaspoon | 5ml | Sugar |
Freshly-ground black pepper - to taste |
Cook steak -- grill, broil, or fry in a non-stick pan until medium-rare. Set aside on covered platter to keep warm.
Cook soba noodles in simmering water until almost tender. While noodles are cooking, steam the vegetables until tender-crisp.
Combine sauce ingredients. Heat through.
Drain soba noodles, rinse and redrain. Toss vegetables with the noodles. Place onto plates. Slice steak across grain into 1/2-inch strips. Arrange on top of vegetables and noodles. Top with sauce. Serve immediately.
