Spicy Chicken Saute Recipe - Cooking Index
1 tablespoon | 15ml | Chili powder |
1 1/4 teaspoons | 6.3ml | Ground cumin |
1/8 teaspoon | 0.6ml | Cayenne pepper |
4 | Boneless skinless chicken breasts | |
1 1/2 teaspoons | 7.5ml | Olive oil |
1/2 cup | 118ml | Chicken broth |
1 tablespoon | 15ml | Vinegar |
8 oz | 227g | Canned tomatoes - diced |
4 oz | 113g | Mild or hot green chili peppers - diced |
1 | Lime - cut into wedges |
Mix the three dry ingredients together. Rub 1 tablespoon of the spice mixture onto the chicken. In a skillet, warm the oil and add the chicken. Saute for 2 to 3 minutes per side.
Transfer the chicken to a plate. Add the broth, vinegar and the remaining spice mixture to the skillet and bring to a boil. Boil for 1 to 2 minutes.
Return chicken to the skillet. Add the tomatoes, corn and chilies and bring to a simmer. Continue simmering for about 5 minutes, or until the chicken is cooked through. Serve with lime wedges.
