Shrimp Scampi Recipe - Cooking Index
2 lbs | 908g / 32oz | Large shrimp - shelled, deveined |
4 tablespoons | 60ml | Diet margarine |
1 tablespoon | 15ml | Olive oil |
2 tablespoons | 30ml | Lemon juice |
1/4 cup | 15g / 0.5oz | Chopped shallots or green onions |
1 tablespoon | 15ml | Minced garlic |
1/4 teaspoon | 1.3ml | Salt |
Freshly-ground black pepper - to taste | ||
1/4 cup | 36g / 1.3oz | Chopped parsley |
4 cups | 948ml | Cooked spaghetti |
2 tablespoons | 30ml | Brandy or sherry - (optional) |
In a large skillet, heat olive oil. Add the shrimp and cook until opaque in the center; remove to a warm plate.
Add the garlic and shallots to the skillet and cook until fragrant (about 10 seconds), then add the lemon juice, (brandy or sherry), parsley, salt and pepper. Remove pan from heat and add diet margarine.
Return the shrimp to the pan and toss to coat with the sauce. Arrange over pasta. Spoon remaining sauce over shrimp.
