Stuffed Artichokes

Recipe Ingredients

4   Artichokes
1/2 lb 227g / 8ozSwiss cheese - grated
1/4 lb 113g / 4ozMozzarella cheese - grated
1/2 cup 55g / 1.9ozCelery - chopped fine
1/2 cup 31g / 1.1ozOnion - chopped fine
1 lb 454g / 16ozCrabmeat
4 oz 113gHot pepper cheese - grated
  Salt and pepper and red pepper
1/4 cup 36g / 1.3ozBell pepper - chopped fine
1/2 cup 73g / 2.6ozBread crumbs
1   Butter
2   Eggs - well beaten

Recipe Instructions

Wash artichokes and cut off tips.

Boil until tender. Drain. Saute celery, bell pepper and onions in butter.

Remove from heat. Add crabmeat and grated cheeses. Add bread crumbs and eggs. Mix well.

Clean out heart of artichokes and stuff with crab mixture. Stuff each leaf.

Wrap in foil and bake at 375F for 35 minutes
