Scallop and Shrimp On Skewers Recipe - Cooking Index
1/2 lb | 227g / 8oz | Sea scallops |
1/2 lb | 227g / 8oz | Large raw shrimp - peeled and |
3 tablespoons | 45ml | Olive oil |
3 tablespoons | 45ml | Lemon juice |
2 | Garlic - minced | |
3 tablespoons | 45ml | Minced parsley |
1/4 teaspoon | 1.3ml | Dried basil - crushed |
1/8 teaspoon | 0.6ml | Black pepper |
1/2 lb | 227g / 8oz | Mushrooms |
Pat scallops and shrimp dry. Combine olive oil, lemon juice, garlic, parsley, basil and black pepper to make a marinade.
Add shellfish and marinate 30 minutes to 1 hour, stirring occasionally Alternate scallops, shrimp and mushrooms on skewers without crowding. Brush with marinade.
Broil or grill 4" from heat source for 4 minutes.
Turn skewers, brush with marinade and continue to cook about 3 minutes more or until scallops and shrimp are opaque Do not overcook.
Serve with rice pilaf, if desired.
