12 oz | 340g | Fettuccine |
4 cups | 584g / 20oz | Broccoli florets |
2 cups | 474ml | Julienned sweet yellow peppers |
1 cup | 62g / 2.2oz | Sliced onions |
4 teaspoons | 20ml | Olive oil |
1 cup | 237ml | Sliced black olives |
1 teaspoon | 5ml | Dried oregano |
1 teaspoon | 5ml | Freshly-ground black pepper |
4 tablespoons | 60ml | Grated Parmesan cheese |
Boil the fettuccine for five minutes, then add the broccoli and boil for five minutes more. Drain and keep warm.
Meanwhile, saute the peppers and onions in the oil over medium heat for five minutes, or until limp. Add the olives, oregano and black pepper. Cook for two minutes. Toss the pasta and vegetables, and sprinkle with the Parmesan.
