Pasta With Swiss Chard And Mushrooms Recipe - Cooking Index
1 lb | 454g / 16oz | Swiss chard |
1 cup | 62g / 2.2oz | Chopped shallots or green onion |
2 | Garlic cloves - sliced | |
8 | Sliced mushrooms - (to 10) (small) | |
1/4 cup | 59ml | Olive oil |
1/2 lb | 227g / 8oz | Dried pasta (shell or fettucine) |
1/4 teaspoon | 1.3ml | Freshly-ground black pepper |
1/4 cup | 36g / 1.3oz | Grated Parmesan cheese |
Wash Swiss chard, remove stems and chop into 1-inch pieces. In a large skillet, heat the olive oil and saute the shallots (green onions), garlic and mushrooms for about 5 minutes. Add the Swiss chard, reduce heat and cover the pan. Cook for about 3 minutes. Turn chard over with tongs so that uncooked leaves are on the bottom and wilted leaves are on top. Cover and cook until completely wilted.
Cook the pasta in a large pot until al dente. Drain well, return to the pot. Pour the chard mixture over the pasta and toss. Divide onto warmed plates. Top each with 1 tablespoon Parmesan cheese and fresh cracked pepper. Serve immediately.
