Pasta With Swiss Chard And Mushrooms

Recipe Ingredients

1 lb 454g / 16ozSwiss chard
1 cup 62g / 2.2ozChopped shallots or green onion
2   Garlic cloves - sliced
8   Sliced mushrooms - (to 10) (small)
1/4 cup 59mlOlive oil
1/2 lb 227g / 8ozDried pasta (shell or fettucine)
1/4 teaspoon 1.3mlFreshly-ground black pepper
1/4 cup 36g / 1.3ozGrated Parmesan cheese

Recipe Instructions

Wash Swiss chard, remove stems and chop into 1-inch pieces. In a large skillet, heat the olive oil and saute the shallots (green onions), garlic and mushrooms for about 5 minutes. Add the Swiss chard, reduce heat and cover the pan. Cook for about 3 minutes. Turn chard over with tongs so that uncooked leaves are on the bottom and wilted leaves are on top. Cover and cook until completely wilted.

Cook the pasta in a large pot until al dente. Drain well, return to the pot. Pour the chard mixture over the pasta and toss. Divide onto warmed plates. Top each with 1 tablespoon Parmesan cheese and fresh cracked pepper. Serve immediately.
