1/2 | Garbanzo beans - (19 oz can) - drained | |
1/2 cup | 80g / 2.8oz | Golden raisins |
1/4 teaspoon | 1.3ml | Cracked peppercorns |
1/2 cup | 118ml | Unsalted chicken broth |
4 teaspoons | 20ml | Grated Parmesan cheese |
4 cups | 948ml | Cooked pasta |
Cook pasta until "al dente." In a large skillet, saute the mashed garlic in the olive oil. Add the garbanzo beans and the chicken broth. Stir until warmed. Add the raisins and the spinach. Heat just until spinach is wilted. Do not overcook.
Divide over cooked pasta. Top with Parmesan cheese and cracked peppercorns. Serve immediately.
