Mersey Point Smoked Mackerel Log

Recipe Ingredients

2   Smoked mackerel fillets
8 oz 227gLight cream cheese
2 teaspoons 10mlLemon juice
1 teaspoon 5mlOnion - finely chopped
1 tablespoon 15mlCelery - finely chopped
1 teaspoon 5mlHorseradish
  Salt
  Pepper
1 cup 93g / 3.3ozAlmonds - crushed
1/4 cup 36g / 1.3ozParsley; fresh - fine chopped

Recipe Instructions

Remove skin and bones from smoked mackerel.

Mix and blend smoked mackerel, cream cheese, lemon juice, onion, celery, and horseradish. Add salt and pepper to taste.

Spread mixture on plastic wrap and form into a log.

Refrigerate until firm. Combine almonds and parsley. Roll log in this mixture. Serve with crackers.
