4 cups | 250g / 8.8oz | Lobster meat [chopped] |
1/4 cup | 49g / 1.7oz | Butter |
1 teaspoon | 5ml | Salt |
1/4 teaspoon | 1.3ml | Pepper |
1/8 teaspoon | 0.6ml | Cayenne pepper |
1/8 teaspoon | 0.6ml | Mace |
1 cup | 237ml | Whipping cream |
3 | Egg yolks [beaten] |
1. Saute lobster meat in the pan for 5 minutes. Add all of the spices, and then cook for 5 minutes..
2. Stir in the cream and the eggs, cook until thickened stirring constantly.
May add sherry to taste, if desired...
