Hearty Halibut Recipe - Cooking Index
Vegetable oil spray | ||
2 lbs | 908g / 32oz | Halibut fillets |
(or other firm fish steaks) | ||
2/3 cup | 41g / 1.4oz | Thinly sliced onion |
1 1/2 cups | 355ml | Sliced fresh mushrooms |
1/3 cup | 20g / 0.7oz | Chopped tomato |
1/4 cup | 36g / 1.3oz | Chopped green bell pepper |
1/4 cup | 36g / 1.3oz | Chopped fresh parsley |
3 tablespoons | 45ml | Chopped pimiento |
1/2 cup | 118ml | Dry white wine |
2 tablespoons | 30ml | Fresh lemon juice |
1/4 teaspoon | 1.3ml | Dill weed |
Black pepper - freshly ground, to taste | ||
8 | Lemon wedges - for garnish |
Preheat oven to 350F Lightly spray a covered baking dish with vegetable oil.
Rinse fish and pat dry.
Arrange onion slices in the bottom of prepared baking dish. Place fish on top. Set aside. In a bowl, combine remaining vegetables. Stir to mix well, and spread over fillets.
In a small bowl, combine wine, lemon juice, dill, and black pepper. Pour over fish and vegetables. Cover and bake 25 to 30 minutes, or until fish flakes easily when tested with a fork.
Garnish with lemon wedges.
