Lean Beef With Greens And Feta Sauce Recipe - Cooking Index

1 tablespoon | 15ml | Coarse mustard |
4 cups | 948ml | Torn chicory |
2 cups | 320g / 11oz | Sliced green beans |
1 | Sweet red pepper - julienned | |
2 | Scallions - minced | |
3 tablespoons | 45ml | Red-wine vinegar |
1 teaspoon | 5ml | Olive oil |
2 tablespoons | 30ml | Defatted beef stock |
1 teaspoon | 5ml | Dried oregano |
1 tablespoon | 15ml | Crumbled feta cheese |
4 | Crusty rolls |
Rub the beef on both sides with the mustard. Broil or grill about 5 inches from the heat until cooked the way you like it, about 7 minutes on each side for medium-rare. Let stand for 5 minutes, then slice thinly across the grain.
In a large bowl, combine the chicory, beans, peppers and scallions. In a small bowl, whisk together the vinegar, oil, stock and oregano. Pour over the greens and toss to combine.
Arrange the greens on individual serving plates. Top with the beef. Sprinkle with the cheese. Serve with the rolls.
