Lean Beef With Greens And Feta Sauce

Recipe Ingredients

8 oz 227gLean top round
1 tablespoon 15mlCoarse mustard
4 cups 948mlTorn chicory
2 cups 320g / 11ozSliced green beans
1   Sweet red pepper - julienned
2   Scallions - minced
3 tablespoons 45mlRed-wine vinegar
1 teaspoon 5mlOlive oil
2 tablespoons 30mlDefatted beef stock
1 teaspoon 5mlDried oregano
1 tablespoon 15mlCrumbled feta cheese
4   Crusty rolls

Recipe Instructions

Rub the beef on both sides with the mustard. Broil or grill about 5 inches from the heat until cooked the way you like it, about 7 minutes on each side for medium-rare. Let stand for 5 minutes, then slice thinly across the grain.

In a large bowl, combine the chicory, beans, peppers and scallions. In a small bowl, whisk together the vinegar, oil, stock and oregano. Pour over the greens and toss to combine.

Arrange the greens on individual serving plates. Top with the beef. Sprinkle with the cheese. Serve with the rolls.
