Italian Patties With Prosciutto And Cognac Sauce Recipe - Cooking Index
1 lb | 454g / 16oz | Ground turkey |
1/4 lb | 113g / 4oz | Chopped Prosciutto ham |
1/4 cup | 15g / 0.5oz | Flour |
1 tablespoon | 15ml | Butter or margarine |
Sauce | ||
1 tablespoon | 15ml | Butter or margarine |
1 tablespoon | 15ml | Flour |
1 cup | 237ml | Skim milk |
1 tablespoon | 15ml | Lemon juice |
1 tablespoon | 15ml | Cognac |
Salt - to taste | ||
1/4 teaspoon | 1.3ml | Nutmeg |
In a small mixing bowl, combine the ground turkey and chopped Prosciutto ham. Form into 4 patties and dust with flour. Melt 1 tablespoon of butter or margarine in a skillet and brown patties over medium heat. Continue cooking for about 10 minutes or until white throughout. Remove to a heated platter.
Melt the remaining butter or margarine in the skillet. Add the flour and stir, mixing the butter, flour and pan drippings thoroughly. Add the skim milk, lemon juice and cognac. Heat until thickened. Season with salt to taste. Serve patties on warmed plates. Spoon sauce over patties and sprinkle with nutmeg.
