Hearty And Healthy Chicken Fajitas

Recipe Ingredients

1 lb 454g / 16ozBoneless skinless chicken breast - cut 1" strips
3 tablespoons 45mlLime juice
1/2 teaspoon 2.5mlChili powder
1/2 teaspoon 2.5mlGround coriander
1   Onion - quartered
1   Green pepper - sliced into strips
8   Flour tortillas - (6" dia)
  Chunky salsa

Recipe Instructions

Combine lime juice, chili powder and coriander and pour over chicken breast. Refrigerate for 30 minutes. Add vegetables to chicken and toss well.

Coat a pan with non-stick cooking spray. Add chicken and vegetables and stir-fry until done.

Warm tortillas in microwave for 20 seconds. Fill with chicken mixture. Serve warm with salsa.
