Hearty And Healthy Chicken Fajitas Recipe - Cooking Index
1 lb | 454g / 16oz | Boneless skinless chicken breast - cut 1" strips |
3 tablespoons | 45ml | Lime juice |
1/2 teaspoon | 2.5ml | Chili powder |
1/2 teaspoon | 2.5ml | Ground coriander |
1 | Onion - quartered | |
1 | Green pepper - sliced into strips | |
8 | Flour tortillas - (6" dia) | |
Chunky salsa |
Combine lime juice, chili powder and coriander and pour over chicken breast. Refrigerate for 30 minutes. Add vegetables to chicken and toss well.
Coat a pan with non-stick cooking spray. Add chicken and vegetables and stir-fry until done.
Warm tortillas in microwave for 20 seconds. Fill with chicken mixture. Serve warm with salsa.
