Heart-Healthy Vegetable Pasta

Recipe Ingredients

1 cup 146g / 5.1ozBroccoli in bite-size pieces
1 cup 110g / 3.9ozCarrots in bite-size pieces
1/4 cup 15g / 0.5ozChopped green onions
1/2 tablespoon 7.5mlItalian seasoning
1   Stewed tomatoes - (14 1/2 oz) - not drained
2 cups 396g / 13ozEggless spaghetti noodles
2 tablespoons 30mlDry sherry wine
2   Garlic cloves - minced
2 teaspoons 10mlGrated Parmesan cheese

Recipe Instructions

Cook spaghetti according to package instructions (do not add oil or salt) and drain well.

Coat a pan with non-stick cooking spray and cook broccoli, carrots and onions for 3 to 4 minutes. Add wine, garlic, seasoning and tomatoes and cook until thoroughly heated.

Pour vegetable sauce over noodles and sprinkle with Parmesan cheese.

This recipe yields 4 servings.
