Heart-Healthy Vegetable Pasta Recipe - Cooking Index
1 cup | 146g / 5.1oz | Broccoli in bite-size pieces |
1 cup | 110g / 3.9oz | Carrots in bite-size pieces |
1/4 cup | 15g / 0.5oz | Chopped green onions |
1/2 tablespoon | 7.5ml | Italian seasoning |
1 | Stewed tomatoes - (14 1/2 oz) - not drained | |
2 cups | 396g / 13oz | Eggless spaghetti noodles |
2 tablespoons | 30ml | Dry sherry wine |
2 | Garlic cloves - minced | |
2 teaspoons | 10ml | Grated Parmesan cheese |
Cook spaghetti according to package instructions (do not add oil or salt) and drain well.
Coat a pan with non-stick cooking spray and cook broccoli, carrots and onions for 3 to 4 minutes. Add wine, garlic, seasoning and tomatoes and cook until thoroughly heated.
Pour vegetable sauce over noodles and sprinkle with Parmesan cheese.
This recipe yields 4 servings.
