Country-Style Breakfast Sausage

You can vary the flavor by switching the herbs and spices. For a "softer" flavor, try 1 teaspoon rosemary (omit sage and peppers). For an Italian flavor, try 1 teaspoon of basil and 1/2 teaspoon of fennel (omit sage and red pepper). Recipe Ingredients

1/2 lb 227g / 8ozLean pork loin - ground
1/2 lb 227g / 8ozGround turkey breast
1 teaspoon 5mlSage
1 teaspoon 5mlSugar
1 teaspoon 5mlDry mustard
1 teaspoon 5mlOnion powder
1 teaspoon 5mlFreshly-ground black pepper
1/2 teaspoon 2.5mlRed pepper flakes - (optional)
  Non-stick spray

Recipe Instructions

Ask the butcher to grind the pork and turkey to the consistency you like -- don't grind too fine.

Mix all ingredients together (except non-stick spray). Shape into 12 patties. Spray skillet with non-stick spray. Fry over medium heat, covered to reserve moisture.

This recipe yields 12 patties for 6 servings.
