You can vary the flavor by switching the herbs and spices. For a "softer" flavor, try 1 teaspoon rosemary (omit sage and peppers). Ask the butcher to grind the pork and turkey to the consistency you like -- don't grind too fine.
Mix all ingredients together (except non-stick spray). Shape into 12 patties. Spray skillet with non-stick spray. Fry over medium heat, covered to reserve moisture.
