Art's Mock Crabmeat Casserole

Recipe Ingredients

1 cup	237ml	Mayonnaise
1 cup	237ml	Sour cream
2 tablespoons	30ml	Parsley
1 tablespoon	15ml	Onion - diced
1		Green pepper - diced
1 teaspoon	5ml	Curry powder
6		Hard-boiled eggs - chopped
1 lb	454g / 16oz	Mock crabmeat
		Paprika

Recipe Instructions

Combine all ingredients, except paprika. Turn into greased 1 1/2-quart casserole. Sprinkle with paprika. Bake at 350F for 40 to 50 minutes. Serve over hot, cooked rice.
