Broiled Salmon With Cucumbers Recipe - Cooking Index
1 cup | 62g / 2.2oz | Diced onions |
1/2 cup | 118ml | Vinegar |
4 | Garlic cloves - minced | |
2 teaspoons | 10ml | Minced peeled gingerroot |
1 teaspoon | 5ml | Low-sodium soy sauce |
2 | Cucumbers - thinly sliced | |
1 1/2 lbs | 681g / 24oz | Salmon fillets |
1 tablespoon | 15ml | Olive oil |
4 cups | 640g / 22oz | Hot cooked rice |
In a large nonstick frying pan over medium-high heat, combine the onions, vinegar, garlic, ginger and soy sauce. Bring to a boil, stir and cook for 3 minutes. Remove from heat. Add the cucumbers. Set aside to cool.
Rub the salmon on both sides with the oil. Broil about 6 inches from the heat for 4 to 5 minutes per side, or until cooked through.
Serve on a bed of rice topped with the cucumbers.
