Aunt Margie's Clairmont Casserole Recipe - Cooking Index
Judicious substitution of this for that trimmed 135 calories and 19 grams of fat from the Clairmont casserole. After slashing the fat and eliminating the added salt, we gave the casserole a flavor boost with fresh mushrooms, garlic and parsley. Now you can enjoy the comfort of this casserole, knowing it's healthy eating.

1 | Garlic clove - sliced | |
1 | Onion - chopped (large) | |
1 | Sweet green or red pepper - chopped (large) | |
1 cup | 237ml | Sliced mushrooms |
8 oz | 227g | Ground turkey breast |
1/2 cup | 118ml | Skim milk |
1 | Reduced-fat cream-of-mushroom soup - (10 1/2 oz) | |
1/8 teaspoon | 0.6ml | Freshly-ground black pepper |
1 tablespoon | 15ml | Snipped fresh parsley |
1 oz | 28g | Extra-sharp Cheddar cheese - shredded |
Cook the macaroni for 12 minutes, drain and set aside. Heat the oil in a nonstick pan and saute the garlic, onions, green or red peppers and mushrooms until softened. Add the ground turkey and stir occasionally until the meat changes color.
Combine the macaroni, turkey mixture, milk, soup, pepper and parsley in a 2-quart casserole coated with nonstick cooking spray. Top with the cheddar and bake, uncovered, at 375 degrees for 20 minutes.
