Citrus-Roasted Turkey Breast Recipe - Cooking Index

Cut into 1" chunks | ||
1/2 | Lemon - sliced, and | |
Sprinkled with | ||
1/4 teaspoon | 1.3ml | Coarse kosher salt |
1 cup | 237ml | Oil-cured black olives, such as Nicoise |
2 1/2 lbs | 1135g / 40oz | Boneless turkey breast |
1 1/2 teaspoons | 7.5ml | Lemon-pepper seasoning |
1 teaspoon | 5ml | Ground cumin |
2 tablespoons | 30ml | Olive oil |
Preheat oven to 400 degrees.
In a roasting pan, toss orange, lemon and olives. Place turkey breast in pan, folding thin sides under to make a pocket. Tuck some of orange-olive mixture into pocket. Sprinkle with lemon-pepper and cumin and drizzle oil over turkey. Tent with foil.
Roast in preheated oven for 30 minutes. Reduce heat to 350 degrees and continue cooking 1 hour longer, basting once or twice, until juices run clear at thickest part.
Let stand for 10 minutes before slicing. Serve with pan juices and olives.
This recipe yields 8 to 10 servings.
