4 | White fish fillets - (6 oz ea), such as | |
Lemon sole | ||
Milk - for soaking | ||
4 tablespoons | 60ml | Olive oil |
Flour for dredging - seasoned with | ||
Cayenne pepper, paprika, dried thyme, | ||
White and black pepper, and salt | ||

In a shallow baking dish, soak the fish in milk for about 10 minutes. In a heavy saute pan heat the olive oil over medium-high heat until it is hot but not smoking. Remove the fish from the milk and dredge it in the seasoned flour. Saute the fish for 2 to 3 minutes on each side, or until it just flakes. Serve immediately.
This recipe yields 4 servings.
