Fruit Cornish Hens

Recipe Ingredients

8   Cornish game hens
12   Garlic cloves - peeled (large)
5   Dried oregano
  Salt - (to taste)
  Pepper - (to taste)
250   Red wine vinegar
1/8   Olive oil
150   Pitted prunes
150   Dried apricots
150   Pitted green olives
100   Capers plus a bit of the juice
8   Bay leaves
200   Brown sugar
250   Dry white wine
10   Italian parsley - (chopped)

Recipe Instructions

1) Clean hens well under cold water. Pat dry.
