1/4 cup | 36g / 1.3oz | Chopped mushrooms |
1/2 cup | 118ml | Tomato sauce |
1 cup | 62g / 2.2oz | Chicken consomme |
1 | Tabasco sauce | |
Salt and pepper to taste |
Brown thighs in margarine. After about 10 minutes add onion and brown with thighs. Add tomatoes; cover and let brown. Cook very slowly, adding salt and pepper to taste, Tabasco, thyme, bay leaf, and garlic. Smother mixture slowly for 20 minutes, stirring frequently.
Add bell pepper, mushrooms, and tomato sauce and continue to cook slowly until thighs are tender. Add chicken consommee and continue to cook slowly, covered, for about 1/2 hr.
