4 teaspoons | 20ml | Eggs (large) |
1/4 cup | 36g / 1.3oz | Fine dry breadcrumbs |
1/4 teaspoon | 1.3ml | Salt |
1/2 lb | 227g / 8oz | Grated sharp cheddar cheese |
1/8 teaspoon | 0.6ml | Freshly ground black pepper |
1/8 teaspoon | 0.6ml | Dried oregano |
1/8 teaspoon | 0.6ml | Tabasco sauce |
2 tablespoons | 30ml | Chopped fresh parsley |
Drain marinade from one jar of artichoke hearts into a skillet. In the marinade, saute the onion and garlic until just limp. Drain the second jar of artichoke hearts and discard liquid.
Chop the artichoke hearts; set aside. In a mixing bowl, beat the eggs, then add bread crumbs and seasonings. Stir in cheese, parsley, artichokes and onion mixture. Mix well.
Pour into a greased 9x11 inch baking dish. Bake at 325F for 30 minutes. Cool slightly and cut into squares. Serve hot or cold.
