Dried Fruit-Rice Stuffing

Recipe Ingredients

3/4 cup 148g / 5.2ozButter or margarine
1 1/2 cups 93g / 3.3ozChopped onions
1 1/2 cups 165g / 5.8ozChopped celery with leaves
1/3 cup 48g / 1.7ozChopped parsley
9 cups 1440g / 50ozCooked brown rice
1 teaspoon 5mlDried marjoram - crushed
1/2 teaspoon 2.5mlDried thyme - crushed
1/2 teaspoon 2.5mlDried sage - crushed
  Salt - pepper
3   Eggs - lightly beaten
3/4 cup 177mlTurkey stock - =or=- chicken bouillon
12 oz 340gMixed dried fruit

Recipe Instructions

Melt butter in large skillet. Saute onions, celery and parsley in butter. Remove from heat and combine with rice in large bowl. Stir in marjoram, thyme and sage and season to taste with salt and pepper.

Add eggs, stock and fruit. Mix well. Makes enough for 14-pound turkey
