2 | Marinated artichoke hearts - chopped | |

1/4 cup | 36g / 1.3oz | Fine bread crumbs |
1/2 teaspoon | 2.5ml | Salt |
1/4 teaspoon | 1.3ml | Pepper |
1/4 teaspoon | 1.3ml | Oregano |
1/4 teaspoon | 1.3ml | Tabasco sauce, or to taste |
8 oz | 227g | Shredded cheddar cheese |
2 tablespoons | 30ml | Minced fresh parsley |
Drain marinade from one jar of artichokes into a frying pan. Drain other jar (discard marinade). Chop artichokes and set aside.
Add onion and garlic to frying pan and saute until onions are clear, about five minutes. In a bowl beat eggs with fork. Add bread crumbs, salt, pepper oregano and Tabasco. Stir in cheese, parsley, artichokes and sauted onion mixture.
Turn into greased 7"x11" baking pan. bake 325F for 30 minutes or until set in center. Let cool in pan. Cut into 1" squares. Serve cool or reheat in pan at 325F for 10 minutes. Garnish with parsley.
