Cured Turkey Recipe - Cooking Index
1 1/3 cups | 315ml | Kosher salt |
1/2 cup | 99g / 3.5oz | Sugar |
2 tablespoons | 30ml | Sugar |
2 | Bay leaves | |
1 tablespoon | 15ml | Thyme |
7 | Whole cloves | |
1/2 tablespoon | 7.5ml | Allspice berries - crushed |
1/2 teaspoon | 2.5ml | Juniper berries - crushed |
1 | Turkey - 14 pound or more |
in a very large stockpot combine all ingredients and 2 gallons of water.
Bring to a rolling boil and remove from heat and cool to room temp. Add turkey breast side down and cover and refrigerate overnight.
