Creamed Chicken

Recipe Ingredients

3 tablespoons 45mlButter or margarine
6 tablespoons 90mlFlour
1 1/2 cups 355mlMilk
1 1/2 cups 355mlChicken broth or stock
3/4 teaspoon 3.8mlSalt
1/8 teaspoon 0.6mlPepper
1/2 teaspoon 2.5mlGround savory
2 cups 125g / 4.4ozCooked chicken - - cut in pieces
1 cup 237mlPeas - cooked
1/2 cup 46g / 1.6ozAlmonds - blanched, slivered

Recipe Instructions

Melt fat in a large saucepan; stir in flour. Mix in liquids and seasonings. Cook over moderate heat, stirring constantly, until smooth and thickened.

Add chicken, peas, and almonds. Continue cooking until heated through. Serve hot in patty shells or over toasted waffles or biscuits.

VARIATION: Creamed Tuna -- Use two 7-ounce cans of solid water-packed tuna, drained, in place of chicken and use 1/2 cup coarsely chopped cashews in place of almonds. Omit salt and savory. About 270 calories per serving.
