Cranberry Apple Chicken Breasts Recipe - Cooking Index
1 1/4 cups | 116g / 4.1oz | Cranberries - chopped |
1/3 cup | 48g / 1.7oz | Apple - diced plus |
2 tablespoons | 30ml | Apple - diced |
1/4 cup | 36g / 1.3oz | Walnuts - chopped |
2 teaspoons | 10ml | Walnuts - chopped |
4 | Chicken breasts - skinless | |
Boneless - pounded 1/2" thick | ||
1 cup | 237ml | Monterey jack - shredded |
Preheat oven to 350ø. Combine cranberries, apples and walnuts in a medium glass bowl. Place breasts in a 13x9" baking pan. Top each breast with 1/3 cup filling. Bake for 30 minutes, or until chicken is no longer pink inside. Top each breast with 1/4 cup cheese. Bake for an additional 5 minutes, or until cheese has melted.
