Country Captain (Chicken And Tomatoes)

Recipe Ingredients

4 lbs 1816g / 64ozFryer chicken
1/2 cup 118mlOil - (canola is best)
1/4 cup 15g / 0.5ozFlour
1 tablespoon 15mlButter
1 tablespoon 15mlOnion (medium)
1 tablespoon 15mlGreen pepper - chopped (large)
1   Garlic
1 teaspoon 5mlSalt
1 teaspoon 5mlPepper
  Curry powder to taste
  Thyme to taste
1   Tomatoes - undrained
4 oz 113gSlivered almonds
1/2 cup 80g / 2.8ozRaisins or currents

Recipe Instructions

Coat chicken with flour and brown in skillet in hot oil. In a separate skillet, melt butter and saute the onion, green pepper and garlic until tender. Stir in salt, pepper, thyme and curry powder. Add tomatoes and simmer for 10 minutes. Place browned chicken pieces in a 3 quart baking dish and pour sauce over the top.

Cover and bake for 30 minutes in a 350f oven. Sprinkle with raisins and almonds and bake for 15 minutes longer.
