Coronation Chicken Recipe - Cooking Index

1 tablespoon | 15ml | Vegetable oil |
1 | Onion - chopped | |
2 teaspoons | 10ml | Strong curry paste |
2 teaspoons | 10ml | Tomato puree |
75 | White wine or chicken stock | |
1/2 | Lemon - juice of | |
1 | Pineapple pieces - drained | |
3 tablespoons | 45ml | Greek yogurt |
225 | Mayonnaise | |
3 oz | 85g | Seedless grapes - halved |
Cut chicken into thin strips. Heat oil in small saucepan and saute onion for 3 minutes or until soft. Add curry paste, tomato puree, stock or wine, and lemon juice.
Simmer for 5 minutes Leave to cool. Puree half the pineapple in blender, strain off excess juice. In a large mixing bowl, mix together the yogurt, mayonnaise, pureed pineapple and curried onion sauce.
Stir in chicken, grapes and remaining pineapple. Serve with rice salad and tortilla chips.
