Appetizer Burritos Recipe - Cooking Index

10 | Flour tortillas | |
1 1/2 cups | 219g / 7.7oz | Monterey jack cheese - shredded (6 ounces) |
3 tablespoons | 45ml | Chopped fresh cilantro |
Spread about 3 tablespoons beans over each tortilla to within 1/2 inch of edge; sprinkle each with about 2 tablespoons cheese and 1 teaspoon cilantro. Fold one edge of the tortilla up about 1 inch over mixture; fold right and left sides over folded end. Fold remaining end up. Place seam sides down on each of two 10-inch plates.
Cover each plate tightly. Microwave one plate at a time on high 2 to 3 minutes or until hot. Cut each burrito into 3 pieces with sharp knife. Serve with sour cream and guacamole if desired.
