4 | Chicken breast halves without skin | |
5 tablespoons | 75ml | Lemon juice |
3 tablespoons | 45ml | Light soy sauce |
2 tablespoons | 30ml | Balsamic vinegar |
2 tablespoons | 30ml | Dried basil |
2 | Garlic - minced | |
1/8 teaspoon | 0.6ml | Black pepper |
16 | Arugula leaves |
Combine all ingredients except cheese.
Marinate overnight. Grill on one side for 4 minutes. Turn over and add crumbled cheese and contine to cook until cheese melts and chicken is cooked. Serve over a bed of arugula.
