Chicken Salad W/Tangerines & Red Onions Recipe - Cooking Index

2 cups | 125g / 4.4oz | Cooked chicken - coarsely chopped |
1/2 cup | 55g / 1.9oz | Celery - chopped |
1 cup | 62g / 2.2oz | Red onion - chopped (small) |
1/2 cup | 73g / 2.6oz | Parsley - chopped |
Dressing | ||
3 oz | 85g | Cream cheese - at room temperature |
1/2 cup | 118ml | Mayonnaise |
1 tablespoon | 15ml | Prepared horseradish |
1/4 cup | 59ml | Milk |
Salt and pepper |
1. Peel the tangerines. Scrape the pith from them and finely chop enough peel to make 2T. Reserve.
2. Separate the tangerine sections and remove any pits or seeds. Halve each section and place in a bowl with the chicken, celery, onion and parsley.
3. To make the dressing, combine all ingredients in bowl of food processor and pulse on & off a few seconds until thoroughly combined.
4. Genlty toss the chicken mixture with the dressing. Chill until ready to serve. Serve on any kind of lettuce or whole grain bread. Garnish with reserved peel.
