| 2 cups | 125g / 4.4oz | Cooked chicken breasts - diced |
| 1 1/2 cups | 355ml | Seedless grapes |
| 1 cup | 237ml | Apple - cored and sliced (medium) |
| 1/2 cup | 80g / 2.8oz | Raisins |
| 1/2 cup | 55g / 1.9oz | Diced celery |
| 1/2 teaspoon | 2.5ml | Dried tarragon - crushed |
| Salt and pepper - to taste | ||
| 2 tablespoons | 30ml | Low fat mayonnaise - *see note |
| 2 tablespoons | 30ml | Yogurt - *see note |
| 1/4 cup | 36g / 1.3oz | Chopped parsley |
| Lettuce leaves | ||
| Thyme sprigs - optional |
Combine all ingredients except lettuce and thyme mix well. Sense chicken salad on lettuce leaves. Garnish with thyrne, if desired. Makes 4 to 6 servings
