SPICED CARAMEL-BAKED PEARS (5 PTS)

Serves: 1 people

Recipe Ingredients

1/4 cup 40g / 1.4ozPacked brown sugar
4 tablespoons 60mlButter
1/4 cup 59mlDry white wine or white grape juice
1/2   Vanilla bean - scraped
1/2 teaspoon 2.5mlGround cinnamon
1/4 teaspoon 1.3mlGround ginger
4   Whole cloves and peppercorns
8   Firm just ripe Seckel pears or 4 larger
Pears, or 4 larger pears, peeled, cored
  With stems intact

Recipe Instructions

1. Preheat the oven to 350 degrees. To make caramel: Put the butter,

sugar, wine and spices in a saucepan and heat just until the butter

is melted, and stir.

2. Place the pears upright in a baking dish (taking a small slice

from their bottom side will help them sit straight). Pour the caramel

over each pear. Bake at 350 degrees for 20 minutes, basting several

times. The pears are done when a knife pierces them easily.

3. Before serving, pour the juice into a saucepan and cook for

several minutes until thickened. Pour the juice over the pears and

serve.
