SPICED CARAMEL-BAKED PEARS (5 PTS) Recipe - Cooking Index
1/4 cup | 40g / 1.4oz | Packed brown sugar |
4 tablespoons | 60ml | Butter |
1/4 cup | 59ml | Dry white wine or white grape juice |
1/2 | Vanilla bean - scraped | |
1/2 teaspoon | 2.5ml | Ground cinnamon |
1/4 teaspoon | 1.3ml | Ground ginger |
4 | Whole cloves and peppercorns | |
8 | Firm just ripe Seckel pears or 4 larger | |

1. Preheat the oven to 350 degrees. To make caramel: Put the butter,
sugar, wine and spices in a saucepan and heat just until the butter
is melted, and stir.
2. Place the pears upright in a baking dish (taking a small slice
from their bottom side will help them sit straight). Pour the caramel
over each pear. Bake at 350 degrees for 20 minutes, basting several
times. The pears are done when a knife pierces them easily.
3. Before serving, pour the juice into a saucepan and cook for
several minutes until thickened. Pour the juice over the pears and
serve.
Enough for 4-8 side dishes
