Shrimp with Tomatoes and Garlic (4 PTS) Recipe - Cooking Index
2 tablespoons | 30ml | Olive oil |
3 | Garlic - minced | |
1/2 cup | 118ml | Dry white wine |
1/2 cup | 31g / 1.1oz | Canned tomatoes, drained - seeded and chopped |
20 | X-large shrimp - shelled and deveined | |
1/4 cup | 59ml | Torn fresh basil |
Salt and pepper to taste |
Combine oil and garlic in large deep nonreactive skillet or saute pan.
cook
over low heat 2 minutes or until garlic begins to sizzle. Do not brown.
Add
wine. Increase heat to high and boil 3 minutes or until reduced by half.
Add tomatoes, shrimp and half the basil. Cook, stirrng, 3 minutes or
until
shrimp are opaque through to center. Season with sal and pepper. Garnish
with remaining basil.
