Raisin Scones (2.5 PTS) Recipe - Cooking Index
2 1/4 cups | 140g / 4.9oz | All-purpose flour |
1/3 cup | 65g / 2.3oz | Sugar |
1 tablespoon | 15ml | Grated orange peel |
2 1/4 teaspoons | 11ml | Baking powder |
1/2 teaspoon | 2.5ml | Baking soda |
1/4 teaspoon | 1.3ml | Salt |
1/2 cup | 80g / 2.8oz | Dole Seedless Raisins |
1/2 cup | 118ml | Skim milk |
1 teaspoon | 5ml | Vanilla extract |
Combine flour, sugar, orange peel, baking powder, baking soda and salt.
Cut in margarine, using two knives or pastry blender, until mixture
resembles coarse crumbs.
Stir in raisins. Combine milk and vanilla. Stir into mixture.
Form dough into two balls. Pat one ball, on floured board, into 6-inch
circle (1/2-inch thick). Cut into 6 wedges. Repeat with remaining dough.
Place on baking sheet sprayed with cooking spray. Bake in 400°F oven 15
minutes. Cool on rack.
