Power-Packed Peanut Bars (6 PTS)

Serves: 12 people

Recipe Ingredients

2 1/2 cups 400g / 14ozToasted rice cereal - (Rice Krispies)
2 cups 125g / 4.4ozRolled oats - (quick or regular)
3/4 cup 109g / 3.8ozChopped salted peanuts
1/2 cup 118mlPeanut butter - creamy or crunchy
1/2 cup 80g / 2.8ozFirm-packed light brown sugar
1/2 cup 164g / 5.8ozLight corn syrup
1 teaspoon 5mlPure vanilla extract

Recipe Instructions

Grease a 9-inch-square baking pan and set aside. In a large bowl, mix

together rice cereal, oats and peanuts; set aside.

Place peanut butter, brown sugar and corn syrup in a small saucepan over

low

heat. Stir constantly until mixture is smooth and just starts to boil.

Stir in vanilla and pour over cereal mixture. Toss gently to mix well.

Transfer to prepared pan and press evenly. Let cool completely, then cut

into 12 bars. They will be approximately 1 1/2-by-4 1/2-inches each.

Wrap

bars individually in plastic wrap or individual sandwich bags before

storing

them in an airtight container. (This keeps them from sticking together as

they can sometimes do in our humid weather.)

Per bar: 264 calories, 11 grams total fat, 36 percent calories from fat, 7

grams protein, 38 grams carbohydrates, 3 grams total fiber, no

cholesterol,

154 milligrams sodium.
