Power-Packed Peanut Bars (6 PTS) Recipe - Cooking Index
2 1/2 cups | 400g / 14oz | Toasted rice cereal - (Rice Krispies) |
2 cups | 125g / 4.4oz | Rolled oats - (quick or regular) |
3/4 cup | 109g / 3.8oz | Chopped salted peanuts |
1/2 cup | 118ml | Peanut butter - creamy or crunchy |
1/2 cup | 80g / 2.8oz | Firm-packed light brown sugar |
1/2 cup | 164g / 5.8oz | Light corn syrup |
1 teaspoon | 5ml | Pure vanilla extract |
Grease a 9-inch-square baking pan and set aside. In a large bowl, mix
together rice cereal, oats and peanuts; set aside.
Place peanut butter, brown sugar and corn syrup in a small saucepan over
low
heat. Stir constantly until mixture is smooth and just starts to boil.
Stir in vanilla and pour over cereal mixture. Toss gently to mix well.
Transfer to prepared pan and press evenly. Let cool completely, then cut
into 12 bars. They will be approximately 1 1/2-by-4 1/2-inches each.
Wrap
bars individually in plastic wrap or individual sandwich bags before
storing
them in an airtight container. (This keeps them from sticking together as
they can sometimes do in our humid weather.)
Per bar: 264 calories, 11 grams total fat, 36 percent calories from fat, 7
grams protein, 38 grams carbohydrates, 3 grams total fiber, no
cholesterol,
154 milligrams sodium.
