1 lb | 454g / 16oz | Sweet red pepper (small) |
1 lb | 454g / 16oz | Red onion - chopped (small) |
1 teaspoon | 5ml | Fresh ginger - finely minced or gra |
1 | Garlic - minced | |
1 teaspoon | 5ml | Butter |
1 teaspoon | 5ml | Olive oil |
2 tablespoons | 30ml | Water |
1 tablespoon | 15ml | Soy sauce |
1/4 teaspoon | 1.3ml | Salt |
Trim beans and set aside. Core and seed red pepper, then chop. Place in
a bowl. Add onion, jalapeno, if using, ginger and garlic.
Heat butter and oil in a large wide frying pan set over medium heat. Add
red pepper mixture and cook, stirring occasionally, until onion is
slightly softened, about 5 mins. If making ahead, remove from heat and
leave at room temperature for up to half a day.
Increase heat to medium-high. Stir in beans, water, soy sauce and salt.
Cover and cook, stirring occasionally, just until beans are tender-crisp,
from 5-7 mins.
