Mixed Fruit Coffee Cake (5.5 PTS) Recipe - Cooking Index
1 | Mixed dried fruit - coarsely chopped | |
1/2 cup | 118ml | Orange juice |
1 1/2 cups | 165g / 5.8oz | Bisquick® baking mix |
1/2 cup | 99g / 3.5oz | Sugar |
1/3 cup | 78ml | Plain nonfat yogurt |
2 tablespoons | 30ml | Butter or margarine - melted |
1 teaspoon | 5ml | Vanilla |
1 | Egg |
Heat oven to 350º. Grease and flour 9-inch round pan. Heat fruit and
orange
juice to boiling in 1-quart saucepan over medium heat; reduce heat. Simmer
about 3 minutes, stirring occasionally, until thickened and fruit is soft;
set aside.
Stir remaining ingredients until mixed; pour into pan. Top with fruit
mixture.
Bake 30 to 40 minutes or until golden brown and toothpick inserted in
center
comes out clean. Cool 20 minutes.
High Altitude (3500-6500 ft): Bake 35 to 40 minutes.
