Mixed Fruit Coffee Cake (5.5 PTS)

Serves: 8 people

Recipe Ingredients

1   Mixed dried fruit - coarsely chopped
1/2 cup 118mlOrange juice
1 1/2 cups 165g / 5.8ozBisquick® baking mix
1/2 cup 99g / 3.5ozSugar
1/3 cup 78mlPlain nonfat yogurt
2 tablespoons 30mlButter or margarine - melted
1 teaspoon 5mlVanilla
1   Egg

Recipe Instructions

Heat oven to 350º. Grease and flour 9-inch round pan. Heat fruit and

orange

juice to boiling in 1-quart saucepan over medium heat; reduce heat. Simmer

about 3 minutes, stirring occasionally, until thickened and fruit is soft;

set aside.

Stir remaining ingredients until mixed; pour into pan. Top with fruit

mixture.

Bake 30 to 40 minutes or until golden brown and toothpick inserted in

center

comes out clean. Cool 20 minutes.

High Altitude (3500-6500 ft): Bake 35 to 40 minutes.
