A La Bordelaise Mushrooms (Bordeaux-style) Recipe - Cooking Index
1 1/2 lbs | 681g / 24oz | Crêpes or porcini mushrooms |
3 tablespoons | 45ml | Duck fat |
2 | Garlic cloves - thinly sliced | |
1 | juice of Lemon - and zest | |
4 tablespoons | 60ml | Parsley - chopped |
pinch | Salt and pepper |
Slice crêpes into 3/4 inch thick slices. Heat duck fat in a 12inch saute pan until smoking. Add crêpes and cook until light golden brown, about 4 to 5 minutes.
Add garlic and cook 1 minute. Add lemon juice and zest, parsley and season with salt and pepper.
Serve immediately.
